{ An Olive Of A Problem }

My poor little olive tree is laden with fruit (are olives fruit??) There are so many little green gems but I have no idea how to go about making them into anything slightly edible. Any advice? Any Italian (Spanish?) readers?  I also have no idea when they are 'ripe' to be picked...any help greatly appreciated!

Hi Emma, lucky you having such lovely fruit at your fingertips!
You can start picking your olives when some start turning black, they should all be ready then. If you put your clean picked olives in cold water with 5% non iodized salt for 10 days, changing the water every day, making sure you weigh them down so they stay submurged, after ten days, put them in a water/salt solution... 1 cup per 4.2 litres, and change the water/salt mix once a week for 4 weeks. After that, store them in a weeker salt solution, 1/2 cup per 4.2 litres until you are ready to use them. Throw out any squishy ones as you go along! keep them submurged at all times!

That's really neat. I've never even seen a real olive tree before. Don't have those in Pennsylvania!
